Freddy, a Peruvian chef was born in Ica, a city located in the southern of Lima.
His first experience in Peruvian cuisine was helping his grandmother Bertha in the kitchen, she had a food Stand in the Ica market, it is there where Freddy developed his love and passion for the culinary art of the Peruvian gastronomy.
In 2007, Freddy moved to New York and like many immigrants to work, he had the opportunity to work in the Family’s business a Deli "Corner Express", after a while the family opened "La Candela Restaurant" the first Peruvian family restaurant located in Hicksville, working very hard with his family.
Little by little the path opened up, and with the support and dedication of his wife Johanna, together, joining hands to navigate this great dream, forming an exquisite team: Freddy is the Chef Executive and General Manager and Johanna, Administrator and Logistics area.
We are located in the heart of West Hempstead, Long Island NY .
On Friday, July 27, 2012, a day before the Peruvian Independence Day to be precise, we opened the doors for the first time to our customer and delighting the most demanding palate with its exquisite flavors, and there is the beginning of this adventure, which with much effort and sacrifice, and with absolute dedication, would today be "La Candela II" a family restaurant, with a pleasant atmosphere, live music, delicious food, incredible attention, always trying hard to deliver the best to our customers.
Freddy delights the community who always returns to taste his ceviche and other dishes, he is always at the forefront and creating new dishes and styles.
