Freddy, a Peruvian chef, was born in Ica, a city in southern Peru.

His first experience with Peruvian cuisine was helping his grandmother, Bertha in the kitchen. She had a food stand in the Ica market, and it was there that Freddy developed his love and passion for the culinary art of Peruvian gastronomy.

In 2007, Freddy moved to New York and, like many immigrants, came to work. He had the opportunity to join his family’s business, a deli called Corner Express. After some time, the family opened La Candela Restaurant in Hicksville, the first Peruvian family-owned restaurant in the area, where Freddy worked tirelessly alongside his loved ones.

Little by little, doors began to open. With the support and dedication of his wife Johanna, they joined forces to pursue this dream, forming an exceptional team: Freddy as Executive Chef and General Manager, and Johanna as Administrator, overseeing logistics.

We are located in the heart of West Hempstead, Long Island, NY.

On Friday, July 27, 2012, just one day before Peruvian Independence Day, we opened our doors for the first time, delighting even the most demanding palates with our exquisite flavors. That day marked the beginning of this adventure, built with effort, sacrifice, and absolute dedication. Today, La Candela II is a family restaurant with a warm atmosphere, live music, delicious food, and outstanding service, always striving to give our customers the very best.

Freddy continues to delight the community, who return time and again for his ceviche and other dishes. He is always innovating, creating new recipes and styles.
